Chicken and White Bean Soup

Ingredients:

  • Chicken Thighs
  • Extra Virgin Olive Oil
  • Chicken Stock
  • White Beans
  • Kale
  • Diced tomatoes
  • Mushrooms
  • Carrots
  • Celery
  • Onion 
  • Garlic
  • Parsley
  • Oregano
  • Basil
  • Thyme
  • Paprika
  • White Pepper
  • Crushed Red Pepper (optional)

Heat olive oil and cook chicken, onion, celery, carrots, and mushrooms. When cooked through, add remaining ingredients. Let cook on low until all of the flavors have come together. If you want a little extra creaminess and protein, top with Greek yogurt!
