Salad Prep
I just want to take a few minutes and be 100% honest about meal prep...I see so many pictures online of containers full of perfectly prepped food. That's great! But life doesn't always let you make time for a few hours of shopping, prepping, cooking and packing. Is it satisfying when you're all done? Yes! But I don't make time for that every week!! I'm meal-prepping for 2, and that takes a big time commitment.
What I have been consistent about is salad prep. It's quick, nothing has to cook, and I am 1000% more likely to eat salads throughout the week. I'm on a greek salad kick at the moment, so I start with baby spinach and top with feta, kalamata olives, sliced grape tomatoes, and cucumbers. This week I added a hard boiled egg for some extra protein. Totally hits the spot!
So, if you're like me, and meal prepping looks super daunting...try making a few salads at a time. Or just put grapes in a few pyrex containers for the week. Anything you're doing to make healthier choices is PERFECT.
