Greek Quinoa Pasta Salad
Let's be honest...sometimes you just need pasta salad. I like to put all of the toppings on everything, and pasta salad is one of the few dishes you can get away with it! I made Greek chicken thighs, and this was the perfect all-in-one side dish. I used quinoa rotini as my base for all of you gluten free goddesses out there. If you'd rather go lower carb, swap out the noodles for zoodles!
Recipe:
- Kalamata olives
- Green olives
- Chickpeas
- Cucumber
- Onion
- Celery
- Feta
- Grape tomatoes
- Trader Joe's Greek Style Feta Dressing
- Noodles
As always, if one of these doesn't sound good, swap it out for one of your faves. Next time, there will definitely be avocado!
